Rockfish and Shallot Banga Càuda Pizza

Ingredients

  • 1 round of pizza dough

  • 1 cup creme fraiche

  • ¼ cup chopped Italian parsley

  • 2 tablespoons minced garlic

  • 2 tablespoons anchovy paste

  • ½ cup  Bok choy

  • ½ cup Kale

  • 2 tablespoons lemon juice

  • 6 tablespoons of olive oil

Directions

Preheat your oven to 550 degrees.

Place a 12”+ cast iron pan skillet in the oven when starting the oven. You want the skillet to become heated to allow the dough to cook more evenly when you place the skillet back in the oven to cook the pizza.

Once the oven has reached its temperature remove the cast iron skillet to become cool enough to place the pizza in the skillet without overcooking the dough.

You can also purchase pizza dough at your local grocery stores. 

Pizza dough is thinned to a thin surface on a clean surface.

Once this is at your desired shape and size you can then add the ingredients.

Prepare the sauce for the base of the pizza. Combine crème fraiche, finely chopped Italian parsley, minced garlic, and anchovy paste. Once this is mixed well, you will want to spread this on your pizza dough. Get a nice amount evenly on the dough.

At this point, you can add the toppings. Take chunks of Pacific rockfish, and roasted shallot (you can do these in advance and let them soak in a red vinegar to bring out a great flavor.

Your pizza is ready to be placed in the skillet. Be sure to place your oven on broil and you will want to stay close to the oven to keep an eye on your pizza. 

Place ample olive oil in the skillet to allow the dough to have a great crispy bottom.

Take a large spatula and guide the dough into the skillet. Once the pizza is in the skillet, place it in the oven on the top rack for 5-10 minutes. Depending on your oven,

Once the pizza is golden brown and a little bubbly, you can take the pizza out of the oven and place your final ingredients in

Be sure to chop up bok choy and kale. Add lemon juice and olive oil and serve.

Dice and prep tomatoes, cucumber, red onion, cilantro and pickled carrots/jalapeños then add to bowl and season with salt.

Peel Side Stripe Shrimp, and reserve roe if available. Chop peeled shrimp into about 3 pieces per shrimp, and add roe and shrimp to the bowl. Season generously with salt.

Juice citrus and add to the bowl, along with the rest of the seasonings. Stir to mix. Taste, and adjust seasonings as necessary. 

Enjoy on a tostada or with your favorite tortilla chip. Top with avocado and a little extra cilantro for garnish.
